The Royal Marsden Cancer Cookbook will be hitting all good bookstores from Thursday,19 February, with 50% of profits being donated to The Royal Marsden Cancer Charity.
The book features a number of delicious and healthy recipes, many from celebrity chefs such as Mary Berry, Nigella Lawson and Prue Leith, whose Muscovado Heaven recipe (pictured) can be found below. All recipes have been selected to be suitable for patients during and after cancer treatment.
It is introduced and edited by Dr Clare Shaw, Consultant Dietitian at The Royal Marsden and published by Kyle Books.
Dr Shaw will be appearing on the BBC World Service programme Health Check tonight, Wednesday 18 February. It will be available afterwards online.
Prue Leith's Muscovado Heaven
This is possibly the easiest dessert you will ever make. You can use any fresh fruit or compote, or even canned fruit, which takes even less preparation. Prue says it is particularly delicious with fresh mango or passionfruit, but use whatever takes your fancy. If you want to serve this with a biscuit, a gingery one would work well.
- 200g-250g (7oz-9oz) fruit
- 100ml (3½ fl oz) double cream
- 100ml (3½ fl oz) Greek yoghurt
- 4 tablespoons muscovado sugar
Divide the fruit between two glass dishes or large ramekins. Mix together the double cream and Greek yoghurt, until well combined and thick, but not set. Spoon this over the fruit.
Sprinkle the sugar over the cream and yoghurt. You will need to do this in a very thick layer. Put in the fridge to chill for around 30 minutes. The sugar will dissolve into a dark lake. To introduce a little crunch, sprinkle over a little more sugar or eat with a thin, sweet biscuit.
